Good question. Part of the answer depends on how you are making the chicken. If you are making BBQ chicken our Full Moona Luna Oaked Chardonnay would be a great choice. if you are making a sweet sour or Thia with a bit of spice I would go with TyWurztraminer. The spice notes in a Gewurztraminer will pair nice with the light spice.
